These scones are a light, mildly sweet treat that is great for breakfast or any time of day. Serve them drizzled with honey or jam.
- 4 cups Self Rising Flour and extra to dust
- 1/2 cups butter cold
- 1/2 c. sour cream
- 1/2 c. honey
- 1/2 c. dark brown sugar
- 2 T. melted butter
- 1 T. sour cream
- Optional: Add 1/2 - 1 c. dried fruit if you wish such as raisins
-Preheat oven to 375 degrees F.
-In a large bowl, add self rising flour and mic brown sugar into it.
-cut your butter up in smaller pieces and distribute the pieces evenly over flour.
-Work the flour and butter together gently with your fingers until your mixture turns to a course crumbs texture.
-In a separate bowl, mix sour cream and honey together.
-Pour sour cream honey mixture into flour mixture and fold in until it forms a soft ball.
-Dust your work are with flour.
-Press dough into a 1/2 inch thick disk with your hands or a rolling pin.
***the dough will be very soft so keep your hands and the surface dusted well.
-Use a biscuit or any other shape cutter to cut out scones.
-Place on ungresed sheet pans about 2 inches apart.
-Mix 2 T. melted butter with 1 T. sour cream to brush scones before baking. Repeat brushing 1/2 way through baking.
-Bake scones 10 minutes or until just golden.
Serve warm drizzled with honey :)
