Garlic and Cheddar muffins

How To Survive Inflation With The Rising Cost Of Food

Yield: 10 – 12 muffins

These muffins are a lot like biscuits, but so cheesy and deliciously flavored that they melt in your mouth! The garlic and chive, cheesy muffins recipe is very easy to make that you will keep this recipe close!


  • 2 c. Self-rising flour
  • 1 c. milk
  • 1/4 c. Cheddar Cheese finely shredded
  • 1 egg
  • 1/8 c. vegetable oil
  • 1 t. lemon juice
  • 1 T. Sugar
  • 1 t. minced garlic
  • 1/2 t. Garlic powder
  • 3 T. melted butter
  • ¼ t. salt
  • 1 T. Chives


In a large mixing bowl, combine the milk, egg, veg oil, lemon juice, sugar, garlic powder, and flour.

Beat with electric mixer until smooth and completely combined.

Using a wooden or plastic spoon, gently but minimally combine the cheese with the dough.

Batter should be “dropping consistency”. If necessary, add only enough additional flour so batter will "drop" from spoon in a lump.
Drop batter into 8-10 paper-lined muffin tins.

Use caution when filling cups as these will triple in size while baking!

Melt butter with minced garlic and salt.

Brush tops of batter with garlic butter and add a bit more shredded cheese and the chives  to the buttered  tops.

Bake for 25-30 minutes, or until golden brown.

Cool in pan for 10 minutes. Serve hot.
