Creamy Broccoli Soup

Yield: 4-6 servings (depending on appetite and other dishes you are serving)

Who does not LOVE creamy soups? This broccoli soup has broccoli spears surrounded by the creamiest, most flavorful cream soup you will ever have. Garnish with Bacon, ham, cheese or anything else you LOVE in your creamy soups.

  • 16 oz. Broccoli Spears (Lightly steamed)
  • 6 c. Milk
  • 1/2 c. Butter
  • 1 c. shredded cheddar cheese
  • 1/2 c. flour
  • 3 T. minced onion
  • 3/4 c. sour cream
  • Salt and pepper to taste


In soup kettle, on medium heat, melt butter.

Add onions to butter and cook until onions are soft and translucent.

A little at a time, stirring constantly, add flour to make roux.

Add sour cream and stir in.

Add milk slowly, stirring small amounts in completely before adding more. This avoids lumps.

Once all of your milk is added, put your broccoli in and reduce heat so that there is no chance of boiling. NEVER boil this!

Add cheese, salt and pepper and simmer on low heat until the broccoli is cooked to the tenderness you want. I don't like my soup with mushy veggies so I dont simmer long.

Serve hot and garnish with extra cheddar cheese and bacon if you wish.
