Zucchini Bread

Yield: 2 loaves
Time: Approx. 1 hour









Ingredients:

  • 3 ¼ cups flour
  • 1 teaspoon nutmeg
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs beaten
  • 2 cup zucchini grated
  • 1 teaspoon lemon juice
  • 1 cup chopped walnuts

Directions:

Preheat oven to 350

Combine sugar, eggs, vegetable oil, and lemon juice.
Beat till smooth.

In a separate bowl,
Combine flour, cinnamon, nutmeg, and baking soda. Mix thoroughly.
Slowly add dry mixture to wet mixture, a little at a time until mixed completely.

Fold nuts into batter

Grease 2 standard bread pans or 5 mini loaf pans
Standard pan size: bake 1 hour
Mini loaves: bake 45 min.
